No excuses

No excuses today, just a recipe.  I was inclined to bake yesterday, and I did. I knew I wanted a muffin that involved pumpkin and quinoa, but a bunch of the recipes I found had way too much sugar and would turn into cupcakes.  So I made up a recipe, baked the suckers, took pictures, and now I'm blogging.  Amazing how that works isn't it?




Whole Wheat Pumpkin Muffins with Coconut and Quinoa

Preheat oven to 375F

2 C Whole Wheat Pastry Flour (available in bulk at the Twin Cities Coops)

1 C Cooked Quinoa (1/2 cup dry)

3/4 cup fine cane sugar

1 tsp pumpkin pie spice

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 C. cooked pumpkin or canned pumpkin puree

1 egg

3/4 cup buttermilk

2 tbsp melted butter

2 tbsp vegetable oil (I used olive oil, as it was all we had on hand)

1 tsp fresh ginger finely grated (dry would suffice as a substitute)

1 tsp vanilla extract

1/2 cup shredded unsweetened coconut plus more for dusting


In a large bowl, combine quinoa with flour until adequately separated (until balls are approximately the size of tapioca pearls)

Add remaining dry ingredients except coconut and stir until well mixed.  Set aside.

In a medium bowl whisk together all wet ingredients.  Fold wet ingredients and coconut into dry, until just combined. 

Spray muffin pan with cooking spray and fill cups threequarters of the way full. Sprinkle with remaining coconut.

Bake 20-25 minutes until tops have browned.  Remove from oven and eat immediately!  Oh, you can't eat 1 1/2 dozen muffins all by yourself?  Cool the remaining muffins on a rack.

Yummm! I love making batches of muffins and popping them in the freezer for quick & healthy breakfasts and these fit the bill perfectly! Thanks for sharing!
